Blackcurrant cooked down until it is jammy rather than sharp, sitting on a base of dark berries with raspberry puree stirred through. It is a thick, syrupy blend — closer to fruit preserve than to fresh fruit.
Blackcurrant is usually deployed for its acidity. Braising it does the opposite: the tartness drops away and what is left is depth. That makes this one of the few blackcurrant liquids that reads as rich instead of sharp, and it is why the raspberry has to be there to stop it going flat.
